Learning Opportunities

Overview
  • A WFPB lifestyle aims to maximize consumption of nutrient dense plant foods while minimizing process foods, oils, and animal foods (including dairy products and eggs). It encourages lots of vegetables (cooked or raw), fruits, beans, peas, lentils, soybeans, seeds and nuts (in small amounts) and is generally low in fat.
  • Research shows that plant-based diets are cost-effective, low risk intervention that may lower blood pressure, HbA1C, and cholesterol levels as well as increase Weight loss and reverse many chronic diseases (diabetes II, high blood pressure, heart disease, certain cancers and autoimmune diseases) as well as reduce the number of medications needed to treat chronic diseases and lower heart disease mortality rates.

     ​From the team that brought you PlantPure Nation, From Food to Freedom tells the story of a live-in immersion program in Greensboro, NC with six participants (and two spouses) diagnosed with type 2 diabetes. The 10-day program includes biometric testing, physician supervision, and daily meals. As we go through the immersion, we hear from participants of their past struggles living with such a dreaded disease, and we hear of their hope for a better life. We watch firsthand as they suddenly change their diet from a standard American diet to a whole food plant-based diet, and we see how this leads to unexpected and astounding results.
     Their individual stories and the story of the immersion also creates the opportunity for digressions into the topics of nutrition, chronic disease, immunity, and the Covid pandemic. Well over 95% of the people who experienced the worst Covid outcomes had pre-existing conditions, mostly lifestyle-related conditions such as type 2 diabetes.
     From Food to Freedom opens our eyes to the possibility of transformational change in society and it charts a hopeful pathway for people wanting to live free of disease and costly pharmaceuticals.

Both the book and the film – presents 36 stories of disease reversal by converting to a whole food, plant-based diet. There are countless other such stories. I attended Jeanne’s class. It was eye opening! First, her recipes were great and easy and I can’t wait to try them. But most of all I had been researching on my own non toxic pots and pans and only came up with stainless steel, where most times you have to use oil. But going to this class, Jeanne introduced us all to other options!!! They are non stick and non toxic!!! I couldn’t be happier. Not many people look at the toxic side to pans,  your skin, the environment, but Jeanne does.
It doesn’t get much better than that. I am looking forward to her next class. Ann Marie C.

I have been kicking around in the WFPB space for a couple of years and have listened to countless podcasts, watched countless videos, and purchased way too many cookbooks.  All I can say is that because Jeanne has a background in chemistry and is also an educator, she brings a depth and clarity in her presentation you won't find anywhere else.  Besides being friendly, informative, and kind, she herself has been on a healing journey and speaks from personal experience. She takes whatever the time needed to fully address questions; she isn't in this to be flashy, she is in it because she genuinely cares. I am looking forward to future classes!

Blue zones are places where people enjoy good health as well as healthy brain functions well into old age. In all these places, people's food choices have one thing in common: they emphasize food from plant sources. The biggest source of saturated fat in the American diet is from dairy and meat products. Combining the saturated fat with metals aggravates the production of beta-amyloid in your brain cells. Zinc causes the beta-amyloid to come together and copper and iron make free radicals that destroy your brain cells.
